Beat rice and curd in a mixer.

Take it out in a large utensil and add sooji and salt.

Add enough water to get the idli batter consistency.

Cover and leave it to rest for 30 minutes.

. After 30 mins, add eno and if needed, water.

Adjust salt accordingly.

Steam in idli maker as you do for 7 minutes on high heat.

Once cooled, take it out and serve with hot sambhar and coconut chutney.
