Portabello Mushroom Cap Personal Pizza

So, my wife bought some goat cheese and asked me to use it as an ingredient. I came up with this. They're quick, fun and different.

The smokey flavor from the Kamado Joe, and the buttery awesomeness of a portabello, the richness of the goat cheese with the zing of Italian dressing made a really enjoyable, surprisingly filling little dish.

Portabello Mushroom Cap Personal Pizza

Ingredients

15 minutes
2 pizzas
  1. 2Portabello Mushrooms
  2. 1Roma tomato
  3. 2 TbspOnion diced
  4. 1 TbspFresh Basil Chopped
  5. 1/4 CupItalian dressing
  6. 1/2 CupGoat Cheese crumbled

Cooking Instructions

15 minutes
  1. 1

    Remove stems from mushroom caps. Mix tomatoes, onion, Basil and cheese and set aside.

    Brush Italian dressing liberally over top and bottom of mushroom caps. Then allow excess dressing to drain off.

  3. 3

    Grill at medium-high heat for 5 minutes minutes on each side. Remove from grill.

  4. 4

    Put tomatoes, onion, cheese and basil mixture onto mushroom and grill again until cheese begins to melt and golden.
