Ingredients

15-20 min.
4 servings
  1. 2 cupscooked quinoa
  2. 3 Tbspowdered chicken stock
  3. 1bell pepper minced
  4. 1avocado minced
  5. 1/2large lime squeezed
  6. 1/4 cupcilantro minced
  7. 1/4 cupbalsamic vinegar
  8. 1/4 tspgarlic powder

Steps

15-20 min.
  1. 1

    Boil water and add chicken stock powder, stirring thoroughly.

  2. 2

    Add quinoa to cook. The quinoa will absorb the flavor of the chicken stock while cooking.

  3. 3

    Drain quinoa with sieve and rinse with cold water to drop the temperature.

  4. 4

    Mince cilantro, bell pepper, and avocado. Squish lime juice over cut avocado to prevent browning.

  5. 5

    Add everything into a large bowl and mix.
