Shrimp Stuffed Portobello Mushroom Caps

Brush portobellos clean and remove gills.

Cook brown rice according to package directions.

Sauté shrimp with garlic and extra virgin olive oil until shrimp just start turning pink.

Add brown rice to shrimp and mix together.

Sprinkle salt & pepper in each portobello. Scoop a couple of spoonfuls on top of each portobello and top them off with a slice of tomato and a drizzle of extra virgin olive oil.

Bake at 400 until tomato looks roasted. Serve and yum!
