One of my favourite comfort dishes. It’s easy and quick and so nourishing. It can be a side dish, or a main. You can serve with rice or naan or chapatti ... i just eat it a big bowl of it on its own 😁
Other spices can be added: ginger works nicely.

Ingredients

25-30 mins
2 people as a main/ 4 as a side
  1. 1 tbscoconut oil
  2. 1 tspmustard seeds
  3. 1 tspcumin seeds or ground cumin
  4. 1/2 cupred lentils, rinsed
  5. 1 cupbroccoli, finely chopped
  6. 1/2 cancoconut milk - light or fullfat
  7. you can also use the whole can; if you do, then reduce the amount of broth/ water - or you can just use broth/ water
  8. 1 1/2 cupsvegan or veggie broth (Marigold) or just water
  9. 1 tspturmeric
  10. 1 tspgaram masala
  11. Pinchsalt
  12. 1 tsphot chilli flakes if you like
  13. 1/2lemon

Steps

25-30 mins
  1. 1

    Heat the oil in a large pan. Add the mustard seeds and cumin seeds or ground cumin.

    When the seeds are popping, add the lentils, broccoli, coconut milk, broth, garam masala, turmeric and salt.

    Bring to a low boil. Reduce the heat, cover with lid and simmer for about 10 mins.

    Uncover; add the chilli flakes and simmer for another 10-15 minutes until the lentils soften. Give it an occasional stir to make sure it doesn’t stick. Add more water if it’s drying out.

    Stir in the lemon juice and serve.
