Ingredients

4 servings
  1. 2 cupsbasmatic rice
  2. Curry powder
  3. Seasoned meatstock
  4. Seasoning
  5. Salt
  6. Bell peppers diced
  7. Scotch bonnet pepper chopped
  8. Onions
  9. 1/2kilo liver/kidney (cooked)
  10. Butter

Steps

  1. 1

    Par boil the basmatic rice and rinse out starchy water then set aside in a sieve to drain

  2. 2

    Add the meatstock, scotch bonnet pepper, curry powder, seasoning, salt and little vegetable oil if the meatstock is oiless

  3. 3

    Add the parboiled rice and cook until dried up

  4. 4

    Add the butter in a pan

  5. 5

    Then pour in the diced vegetables and season lightly with salt and some seasoning then add the boiled and diced liver

  6. 6

    Stir fry for 3 minutes

  7. 7

    Pour the stirred fried vegetables into the cooked rice and stir to mix
