Coffee Bun a.k.a Roti Boy

Since I'm a coffee lover, I get excited when making bread with a coffee aroma. Haha, so I went ahead and made it. Oh yes, this is my second time making Roti Boy. The first time, the taste was good, but I felt it didn't rise enough, wasn't cheesy enough, and didn't have enough coffee flavor. Haha, everything was lacking. I'm still a beginner in the world of bread-making. This time, it was a success, my fellow viewers!

Mix all of Ingredient A until well combined and set aside. In another bowl, mix all of Ingredient B and whisk until combined. Gradually add Ingredient B to Ingredient A. Knead by hand or use a mixer until smooth.

Once Ingredients A and B are kneaded, add Ingredient C. Knead or mix again until smooth and not sticky. Shape into a ball, cover with plastic wrap or a cloth, and let rise for 1 hour until doubled in size.

While waiting for the dough to rise, mix the filling ingredients. Combine margarine/butter with grated cheese, shape into small balls, and refrigerate.

After the dough has risen, punch it down and knead for 2 minutes. Divide the dough into 50-gram portions, shape into balls, and let rest for 10-15 minutes covered with plastic or a damp cloth.

While waiting, make the topping. Mix Nescafe, coffee powder, and mocha paste with a little hot water to form a paste.

Combine all topping ingredients with the coffee mixture and mix until well combined. Place in a piping bag and refrigerate.

Flatten the dough balls, add the filling, and reshape into balls. Place on a baking sheet lined with parchment paper and let rise for about 45 minutes.

Remove the topping from the fridge and pipe it onto the dough balls in a spiral pattern.

Preheat the oven for about 10 minutes, then bake the buns for approximately 40 minutes. I used a stovetop oven, so it took a bit longer due to the unstable temperature. Sorry about that, but here's how they look!
