Steps

First wash the vegetable properly, peel them lightly with peeler dont remove the whole skin.

Now in a plate arrange the slit bittergourd one by one,atleast 4 to 5 spoon of salt sprinkle on the vegetables.and leave for 5 hrs.

After 5 hrs, wash it properly for 3 to 4 time with fresh water.

Now in a kadhai heat the oil upto smoky level then cool it completey.

Now again switch on the gas of the kadhai,place karele one by one and cover the lid untill soften.

Now take out the karelas from the kadhai into a plate and fill the masala into it.keep aside

Now in a large pan take some oil,add sliced onions and slit green chillies,saute till pink. Here add masalas like red chilli powder, turmeric, amchoor powder, garam masala according to taste,salt according to taste too.

Now arrange karela,,one by one on to onion masala, cover the lid for 5 min on low medium flame untill masala sperates the oil.

Karele ki subzi is ready now.u can eat this with plain Prantha, chappati with curd raita.
