Clean the chiles and cook them with the garlic. Bring to a boil, then turn off the heat. Add the spices, let it cool, and blend with the vinegar. Once blended, add the apple soda to form a paste. Strain the mixture and use it to marinate each pork steak.

Grill and chop the meat. Heat the tortillas and place the meat on them. Serve with onion, cilantro, and grilled pineapple. You can also grill onions and chiles.

Here in Guadalajara, the meat is placed on a skewer, stacking steak by steak, and grilled until golden. The pineapple is placed on top and grilled at the same time.
