Peel, dice and wash the potatoes

Deep fry the potatoes and set aside

Saute the veggies and add to the beaten eggs

Add seasonings and spices

Carefully arrange the potatoes in the frying pan and lower the heat and pour the eggs over
- 6
Once the bottom is seetled use a plate to turn it over and heat the other side.

Serve with ketchup.
