Potted Stilton with Walnuts

The blend of cheeses makes the stilton creamy & spreadable with the added bonus of delicious crunchy walnuts. I think this would make a great addition to a cheese board! Make them as I have in individual dishes or in a larger serving dish for a buffet. Can be made ahead & kept in the fridge until ready to serve.

Pre-heat the oven to 140 Fan/160C/Gas 3 & get 4 ramekins or small serving dishes ready.
Remove the cheeses from the fridge & allow to come up to room temperature.
Place the walnuts on a baking tray & place in the oven for 10 minutes. Remove from the oven & allow to cool. - 2
Chop the stilton into cubes & put into a mixing bowl along with the cream cheese.
Mix the cheeses together mashing the stilton as you go.
Spoon the mixture into the ramekins & smooth off the tops. Chop the cooled walnuts fairly finely (don't worry if you have a few bigger chunks).
Sprinkle a layer of the chopped nuts on top of the cheese. - 3
Place in the fridge to chill for about an hour or until you are ready to serve.
Serve with crackers or thin toast.
