Chhena Jalebi (Bengali Sweet)

In a small bowl, mix the semolina and milk together and let it sit for 5 minutes.

In a mixing bowl, combine all the ingredients for the mixture (including the semolina and milk mixture). Mix well. Knead the mixture for about 5 minutes until it becomes soft, smooth, and uniform.

Divide the mixture into 4 parts. Take one part and roll it into a long rope, then shape it into a spiral to form a jalebi. Repeat with the remaining portions.

Heat ghee or oil in a pan and fry the jalebis until golden brown.

Meanwhile, prepare the sugar syrup by boiling sugar and water until it reaches a one-string consistency.

Add the fried jalebis to the hot sugar syrup and let them soak for 2-3 minutes.

Remove the jalebis from the syrup, place them on a plate, and garnish with sliced almonds and pistachios before serving.
