Feta Cheese & Dill Muffins

Hello everyone!! Hope everyone had a lovely weekend…:) I am not sure if everyone loves bread, but I am huge fan of breads, all sorts of breads, especially when it’s just come out of the oven, hot and ready to spread butter or that delicious dip that is in the fridge. 🙂 I don’t eat bread on a everyday basis, even though I read many years ago that it is good for us to eat at least one slice of brown bread a day. 🙂
Anyway, Saturday morning was another breakfast/brunch morning but this time I made these muffins filled with cheese and dill. Now, you are probably wondering Dill in the morning?? Wellll, it was actually closer to around noon. 🙂 I made an Omelette this time and not Scrambled Eggs and along with these delicious savory muffins it was a nice addition. 🙂 It is a pretty simple recipe that you can put together in less then 15 minutes, but just keep in mind that I added more Feta Cheese than Dill into my muffins.
After brunch we headed out for a long walk with Charlie, the weather has gone mad I tell you, we had 27 degrees on Saturday with a glorious sunny day!!!! We were walking around with shorts and a T-shirt in the NETHERLANDS in OCTOBER!!

Courgette and Feta filling Muffins Courgette and Feta filling Muffins
Hi everyone, today is “Make a Snack Day” recipe. 🙂 These Courgette muffins are a delight to eat any time of the day, actually I sometimes have them for breakfast. Why you say, 🙂 because they are tasty andddd deliciously slightly salty. 😉 I love French toast, Muesli Cereal, Eggs, for breakfast, but sometimes I enjoy eating something different, a nice change to my morning. 🙂 I guess I enjoy to indulge in these little snacks because while living in Greece, I use to go to our bakery, we didn’t have a cheese shop in our area, before running to catch the bus to go to work and I mean literally running to catch the bus. Back then, if you missed it you never really knew what time it would come by again..In almost every neighborhood in Greece, there is a local cheese pie stores, or if there isn’t one you will absolutely find them in the neighborhood bakery shop, all with a large variety of pies from which to choose. From cheese pies, spinach pies, cream pies, and so many more..they have this absolutely favorite of mine blue cheese spread on mini croissant :).. so good with a good cup of coffee. 🙂 Foodzesty -

Bacon and Cheese Muffins Bacon and Cheese Muffins
I added ingredients to Ms. Shoko Murakami's "Fluffy Muffin" recipe. There is also a recipe for "Cheese Muffins" which adds pizza cheese to the same recipe. My family loves cheese, so I scattered it in the batter. The ingredients contain a lot of salt, so the salt from the original recipe is omitted.Don't over-mix the batter! This is the secret for nice fluffy muffins. If you mix too much, the muffins will not rise well and will become heavy. If you chop the cheese into irregular sizes, you will get both firm and melted pieces in the finished muffins, making them fun to eat.You can use ham instead of bacon, but bacon smells good! Chunky Cheese Muffins Chunky Cheese Muffins
My kids and I love cheese, so we added lots.I was a bit worried about using mayonnaise instead of butter, but it turned out great. You can hardly taste the mayonnaise. The cheese mixed into the batter will melt, but the cheese topping will keep its shape.Adjust the amount you put in the batter and on the top to your preferences. Cream Cheese & Cranberry Muffins Cream Cheese & Cranberry Muffins
I made cranberry and cream cheese bread the other day and had ingredients left over, so I decided to make these for my tea tomorrow. When I used a lot of milk, they came out better than I could have imagined.I added lots of milk to the batter so the muffins came out fluffy. I used dried fruits because they were all I had, but you could use fresh or canned fruit as well. They're great with blueberries, raspberries or strawberries as well! For 12 small muffins. Cream Cheese Yogurt Muffins Cream Cheese Yogurt Muffins
I wanted to make a dessert with salt-preserved cherry blossoms. I made these muffins as I though the salt-preserved cherry blossoms would go really well with cream cheese and yogurt. Topping with cherry blossoms, they became a perfect dessert for spring. Check out my recipe for "Cherry Blossoms Preserved in Salt".Cream the butter and sugar really well until the mixture becomes white and pale. Mixing the flour too much makes the batter heavy, so fold the flour in gently, leaving some unmixed. I wanted to make them light-colored muffins, so I didn't use eggs. Cover with aluminum foil to prevent burning. Recipe by Mimato cookpad.japan -

Great for breakfast and very convenient. Only difference I did was use a dozen eggs, and added 3 oz of Canadian Bacon. Jay-O
