Delicious Coffee Cake!

Ingredients you will need

Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm/8in sandwich tins, or just use 1. Butter the tin and line the bottom with a piece of baking paper.

Add everything into the mixing bowl and whisk

Divide the mixture evenly between the tins, or if you are using one tin, tip it all in :)

Bake the cakes on the middle shelf of the oven for 25 minutes. Check them after 20 minutes. (For a single time, bake for 60 minutes) The cakes are done when they’re golden-brown and coming away from the edge of the tins. Press them gently to check – they should be springy to the touch, or stick a skewer in to see if it comes out clean. Set aside to cool in their tins for 5 minutes.

If you are using 1 tin, wait for the cake to be cool and slice in half.

Whilst it’s cooling, start making the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk then cover and put to one side until ready to ice the cake.

Once the sponges have completely cooled, spread half the icing on the bottom of one and sandwich the 2 cakes together. With the other half of the icing, decorate the top.

To take your cakes out of the tins and set aside to cool completely.
