Ingredients

  1. 3 tablespoonsPanang curry paste
  2. 250 gramschicken breast
  3. pea eggplants (optional)
  4. 4kaffir lime leaves
  5. 2 teaspoonsstevia sugar
  6. pinchlow-sodium salt
  7. 4sliced chili peppers
  8. 3/4 cupalmond milk (180 ml)
  9. 1 tablespoonolive oil
  10. 1 tablespoonjulienned ginger

  1. 1

    Heat a pan over low heat and add olive oil. Add the Panang curry paste and stir-fry until fragrant. Add 1 ladle of almond milk and stir until the oil separates.

  2. 2

    Add the chicken breast and stir-fry until partially cooked. Season with stevia sugar and salt. Add the remaining almond milk and bring to a boil again. Add the pea eggplants, chili peppers, julienned ginger, and kaffir lime leaves.
