Ingredients

4 servings
  • 1 kgfrozen or fresh green beans (preferably romano beans but because of availability I used french beans instead)
  • 1 cupolive oil
  • 4medium tomatoes
  • 1medium white or yellow onion
  • 4garlic cloves
  • 1 spoontomato or paprika paste
  • Salt and pepper

    Put the olive oil in a pot, add the chopped onions and chopped garlic when oil is hot.

  2. 2

    If beans are thick you should trim them, and if too long, you should cut them in half. When onions turn transparent, add the green beans and stir well.

  3. 3

    Keep an eye on the green beans - make sure they don't burn (might need to add a bit of lukewarm water or olive oil).

  4. 4

    Place tomatoes in a bowl with boiling hot water and wait app. 10 min for the tomato skin to soften so that it is easy to pull it off. Remove skin from tomatoes and chop into cubes.

  5. 5

    Add the tomatoes to the beans, stir and cover the pot. Let it cook until beans change color to a softer/lighter/yellowish green.

  6. 6

    Serve hot or cold with flat bread (it tastes better cold!). Sahtein!
