Groundnut stew with rice and plantains
If you want something different from the regular Nigerian stew, definitely try this.
Steps

Wash the meat thoroughly then put in a pot. Season with 1 spoon of garlic ginger paste, curry, thyme, 1 onion and seasoning cubes. Set on heat and cook till done.

Wash the tomatoes, pepper and tatashe and blend together with 1 onion bulb.

Pour the blended mix into a dry pot and cook with the lid open till all the water evaporates leaving you with a thick paste.

Chop the remaining onions and set aside

Using a dry mill, blend the fried groundnuts thoroughly till you achieve a smooth peanut butter consistency.

In a clean pot, pour in the cooking oil and turn on the heat. Once it's hot enough, add the cooked meat and fry then add the remaining garlic ginger paste and stir. Add the chopped onions and then the blended tomato mix. Stir well and add 1 spoon of curry powder, thyme, salt and 2 seasoning cubes.

Cover the pot and allow to cook till the stew is well fried. Keep checking it regularly so it doesn't burn.

Once the stew is fried, add the groundnut paste and mix well into the fried stew. Cover for 2 - 3 mins then pour in the meat stock.

Reduce heat and allow to simmer for 10-15 mins.

Taste for seasoning and adjust as required. Turn off the heat.

Cook your rice and fry your plantains

Serve the cooked rice with your delicious groundnut stew and fried plantains.
