For Uttapam batter-
Wash and soak udad daal, rice and fenugreek seed in water for 8 hours. - 2
After 8 hours remove excess water and finely grind.
Let batter fragment for 10 hours. - 3
For Masala-
Heat 1 tablespoon oil in a pan,splutter mustard seed, cumin seed, add curry leaves,green chilli and saute it. - 4
Add turmeric powder, red chilli powder and salt, saute it and add boiled potatoes.Cook for 2 minutes then add coriander leaves.

Add salt in batter and mix well. Take 1 cup batter in a pan, spread a little,add masala in middle.Sprinkle few oil drops around the uttapam.

Cook both side evenly and serve hot with chutney or shambhar.
