Apple and raspberry strudel

Sieve the flour , salt and sugar, place in a mixing bowl

Add the oil , eggs, water and vinegar and mix into a smooth dough for 15 minutes

Wrap the dough up and leave to rest at room temp for 1 hour

Peel and slice the apple thinly and mix into cinnamon sugar
- 5
Fry the breadcrumbs in a little melted butter untill golden and add to the apple mix along with the ground almonds, lemon zest, sultanas and raspberries

Roll out the dough into a rectangle to as thin as possible on a floured table cloth, very gently begin to stretch the dough as thin as possible using the back of your hands. Try to get the pastry to be as transparent as you can

Trim the edges and brush with melted butter, place the filling on top evenly and roll up carefully

Place onto a baking tray and brush with more melted butter and sprinkle with sugar if desired
- 9
Place on a baking tray at 180* for 20 - 30 minutes , or until golden brown
