This is a healthy salad and enjoyed as a side dish or an appetiser.
Steps

Discard the roots and stems then chop the arugula.Spread in a salad bowl.Add the vinegar,mustard and olive oil.Add salt and sugar to taste.Add cubed apples,almonds,walnuts and dates.Cherry tomatoes may be added. Toss all with arugula leaves and garnish with scraped manchego cheese.Serve immediately.
