Jeanette’s Pasta Recipe

Many years ago, my then young daughter gave me a pasta machine as a Christmas gift. She asked me to make home-made pasta many times but I never used it, and one day I decided to sell it on eBay. My daughter said it was OK to sell it because I was not using it, but as the end of the sale period approached, she became very upset. I am not going to write the details of my family’s circumstances when she gave me the gift, but it seemed she had strong emotions attached to this pasta machine.

I realised I should not sell it even though I wouldn’t use it. I cancelled the eBay sale. Then, one of the buyers who were interested in purchasing it sent me an inquiry. I explained to her why I cancelled the sale. Then I received a very touching kind reply from her and she gave me this recipe. Her name is Jeanette. That’s why I call this recipe ‘Jeanette’s Pasta Recipe’. These days my daughter and I regularly make fresh pasta, which are absolutely delicious thanks to Jeanette.

Ingredients

Enough for 4 servings
  1. 375 gPlain Flour
  2. 1 tablespoonSalt *Or less…
  3. 4Eggs
  4. 1 tablespoonOlive Oil

Steps

  1. 1

    Mix all ingredients in a bowl with a spatula (to keep your hands clean), knead this until there is no dry bit left over and the pasta dough is smooth. When you have done this, put the dough in a bag and let it sit in the fridge for 2 hours.

  2. 2

    Alternatively place all ingredients in a food processor and process until the dough is formed, then knead it. This is very quick and easy.

  3. 3

    After 2 hours, cut the dough into 4 pieces. Run 1 piece through the machine on the thickest setting, then fold it and repeat this 4 times. Then you can run it through a thinner setting until you get the thickness you want. You will never buy pasta again.

  4. 4

    When pasta are made, place them on a tea towel OR hang them on the drying rack to stop them sticking to each other.
