  • 2eggs
  • 1spring onion, chopped
  • 4small sweet potatoes, grated
  • 2 tbspwholemeal flour
  • Olive oil for frying

    Mix everything and add batter to heated pan shaped as round patties.

    Fry for 3-4 minutes each side and serve with veggies
