Cooking Instructions

Mix sugar, salt and flour together
- 2
Mix in water, oil and egg and let it sit for 30 min
- 3
Fry on a frypan until they have a golden brown color
- 4
Serve with some sweet or salty filling. Jam, sugar or syrup works

Their version used a lot of oil to make a deep-fried styled of latke and used a lot of obscure Kosher seasonings that I omitted. I then reduced the amount of flour and added some grated potato.My daughter once attended an Israeli Jewish school for about a year. In India, people put the ingredients in a clay pot and pound it rhythmically with a stick to blend. I don't have a clay pot, so I shake it in a tumbler covered with a lid (you can use air-tight containers as well.) You can make this whenever you want to drink it, and you don't need to wash cookware afterwards, so this is very convenient.The trick is to shake it really well to make it foamy. The end result is different compared to if you just stirred the ingredients. Finely crushed ice works best. Only use a small amount of ice, enough to cool the drink. St Paddy's Day is just around the corner and it almost slipped my mind! Well, almost. Fortunately, there are lots of kind souls who reminded me of this upcoming holiday. So, lots of greens and Guinness stout? No, not really tho. But I decided to share a couple of Irish recipes with you lovely people.The 1st (which is this) is actually a potato pancake recipe. I can say that this is in between a rosti and a pancake due to the savory taste with crispy-doughy texture. Besides adding some nutmeg, I didn't do much to a traditional boxty recipe. I certainly do not want some angry Irish knocking at my door. Lol!I love to serve my boxty with a French fried egg on top. You can serve it with a poached egg, soft boiled, scrambled eggs or a simple sunny side up. You can even add some bacon on the side as well. It is totally up to your preference. And did you know that potatoes and Ireland have a history together? You can go Google about it. Anyway, Happy St. Paddy's Day and hope you give this recipe a try. Daniel Lim -

My husband and I attended graduate school in Australia. There any items served on a bun are called a burger. A comon burger topping choice there is a fried egg. So we would often order a bacon & egg burger at the campus cantina, which always came with lettuce and tomato. (Much to our surprise the first time, this dish contained no hamburger.) But it was delicious & soon became a favorite for lunch. When we moved away I began making these at home on occasion. They are delicious with my heirloom mortgage lifter tomatoes from the garden!
