Ingredients

  1. For paste
  2. 1big onion roughly chopped
  3. 2-3green chilies - adjust
  4. 1garlic cloves
  5. 1/2 inchginger grated
  6. 2tomatoes roughly chopped
  7. For Curry
  8. 1medium potato cubed
  9. 1/2 cuppeas
  10. 2 cupscauliflower florets
  11. 1 teaspooncumin seeds
  12. 1bay leaf
  13. 1 inchcinnamon stick
  14. 1 teaspoonred chilli powder
  15. 1 teaspooncoriander powder
  16. 1/4 teaspoonturmeric powder
  17. 1/4 teaspoonFennel powder
  18. to tasteSalt
  19. 1/2 teaspoongaram masala
  20. 1 teaspoonKasuri methi
  21. Water as required for the curry
  22. 2-3 tbspoil
  23. 1/4 teaspoonAmchur powder
  24. 3 tbspcream - optional
  25. 3 tbspchopped coriander leaves

Steps

30 mins
  1. 1

    Grind Onions, tomatoes,ginger, garlic and green chilies to smooth paste

    Heat oil in a pan and splutter cumin seeds

    Add bay leaf and cinnamon, saute for 30 sec

    Add ground paste and mix well. Cook for 5-6 minutes

    Meanwhile separately boil water in a vessel with little salt and turmeric. Add cauliflower florets and boil for 1 minute, drain excess water and keep it aside

    Add red chilli powder, fennel powder, coriander powder and salt to gravy and mix well

    Add water and mix well

    Add vegetables and mix well

    Cover and cook until done stirring in between, vegetables should not be mushy, they should retain their shape

  10. 10

    Add garam masala, kasuri methi and amchur powder. Mix well

  11. 11

    Add cream if you want to render rich taste to the gravy

  12. 12

    Garnish with coriander leaves and serve hot
