#summercoolerscontest. Lol so I had to make this dessert a couple of times to get it right for my taste. It’s summer and lemon is one of my favorite ingredients to use not only in desserts but in drinks and in marinades for fish or chicken.

Ingredients

  • 1 packettennis or Marie biscuits
  • 1 tincondensed milk
  • 1/2 cupfresh lemon juice
  • 2egg yolks
  • 75 gbutter
  • 2egg whites
  • 1 tbspnsugar

Steps

    Crush biscuits and mix with butter in a bowl.

    Once combined paste into a sprayed baking tin and refrigerate until set.

    In a bow add condensed milk and egg yolks and whisk until combined.

    Whisk in lemon juice

    Pour mixture into your biscuit crust.

    In a separate clean bowl whisk egg whites with sugar until soft peaks. This takes about 20minutes😅

  7. 7

    Pour the egg whites over the lemon filling and bake in the oven at 180 degrees for about 10 minutes and leave to cool or serve warm. I prefer it cold. Enjoy

If you used lemon juice from a bottle it might be why the filling was runny. Juice squeezed directly from lemons makes the condensed milk curdle and thicken. Perhaps also add a bit more lemon juice - as sour as you would like the taste to be...
