Take a big bowl and add the maida,salt,ajwain, Kasoori methi,red chilli flakes,oil for kneading and mix well with fingers...

Later with the help of little water knead to a tight dough

Keep it aside covered for half an hour

Heat oil for frying

Make 4 parts of the dough

Take one portion and roll into a chapati

Then with the help of a knife cut into long strips 1/2 inch size

Then cut them diagonally...and make diamond shapes

Once the oil is hot put these diamond cut shapes into the oil and deep fry them on low to medium flame till nicely brown and crisp

Later store them in airtight containers....
