Cut pepper into 4 sections. Removing any seeds and roast in the oven for about 40 mins at 180. Leave to cool.

When cool, peel off the skin and slice them up into strips. Add garlic. Add fresh chopped parsley and juice of one lemon. A small sprinkle of salt and touch of oil. Mix and leave to marinade. If you can, leave for a good few hours.
