Healthy Chicken and Spinach Noodle Soup

Gather all the ingredients.

Dice the onion and tomatoes. Place them in a blender with about 2 cups of water. Pulse a few times until roughly chopped, but not fully blended. Set aside.

In a large pot, heat the oil over medium heat. Add the noodles and stir constantly until they are golden brown. Be careful not to burn them, but make sure they are well toasted.

Pour in the blended tomato and onion mixture. Stir. Add the remaining water. Cover and bring to a boil. Then add the chicken bouillon powder and diced chicken. Stir and cook until the noodles are tender.

Once the noodles are cooked, add the cilantro and spinach. Let them boil for just one minute. Done!
