Crunchy Garlic & Thyme Croutons

I’ve been looking for ways to reduce the amount of waste I produce and the first place I looked was in my own kitchen. My household doesn’t eat a lot of bread so we ALWAYS have half a loaf that ends up in the bin.
I had this very stale loaf sitting on the counter (left over from my gazpacho recipe - check it out!) so I thought I’d try and salvage it by making croutons. I’m so glad that I did because these are so delicious! Plus they’ll keep for a lot longer now that they’re dried out.
These are perfect as salad or soup toppers or just to munch on as a snack. You can change up the flavours by experimenting with different herbs and spices.
This recipe is suitable for #vegetarian diets. It can also be adapted to a #vegan diet by substituting butter with any cooking oil of choice.

Heat pan to low-medium heat. Throw in the oil, butter, garlic and bunch of thyme. Pan fry until garlic is golden. Discard garlic and thyme. You’ll be left with the flavoured oil.

Add bread pieces, thyme leaves and salt and fry until golden.

Either serve hot or leave to cool completely before storing in an air tight container.
