Peel and cut the yams. Boil with a pinch of salt and sugar. Strain when it's soft(tafasa daya). While the yam cools,

Sift about two cups of flour and divide it into two. To the first division, add salt, pepper and mix label it flourA. To the second half, add a pinch of salt and label it flourB

Crack some eggs into two separate bowls. To the first bowl, add salt, pepper, ginger powder and mix. Label it EggA. To the second bowl, add salt, ginger powder and maggi to taste. Label it eggB.

Heat oil in a pot/pan. Coat your yam in the following order before you fry. FlourA to EggA to flourB to eggB and fry for 4mins. Serve with ketchup or sauce of your choice.
