Steps

Take a mixing bowl, add flour, salt, oil, sugar, baking soda, baking powder, cumin seeds and curd. Mix it well. As required add little water and make very soft dough. Keep a side atleast for an hour. So the dough get nice bloom.

Take another mixing bowl add boiled potatoes Smash them, add chopped onion, Ginger garlic paste, green chilli paste, salt, kitchen king masala, Dry mango powder, coriander. Mix it well and make the stuffing.

After an hour take a dough add oil and make smooth dough. Make equal parts of it. Keep aside for 5-10 min more.

Now take a rolling board. Sprinkle some dry flour on it. Take a portion of dough. Spread it with hand and put stuffing in it. Close it and roll it. Paste some sesame seeds and Coriander

Take iron griddle on full flame at least for 5 min. Now flap the rolled kulcha on rolling board. Brush water on the back side of kulcha. Place this water side part on the hot griddle so that it get stick on it. Now with the help of pincer flap the griddle directly to the flame. Make sure it get roast from all the side.

Now take the kulcha on plate. Put homemade butter on it. Cut it with cutter. Grate cheese cube and serve with onions and ketchup.
