Steps

  1. 1

    Remove off the fat that you can see on the chicken and boil the chicken for 45 mins

    Don't add any oil use the melted one from the chicken.Add onions and cook for about 5 minutes until soft before adding the ginger garlic and cook for about a min

    Add chicken and mix everything well.put 2 cups of water and let it cook

    Keep checking and stirring to ensure the kienyeji chicken don't dry up and burn.by now the water will have evaporated and make a very thick syrupy that will intensify and concentrate all flavours you may have used

  5. 5

    Add tomato paste or tomatoes and reduce the heat cover to simmer.once the tomatoes soften and broken down add coriander and serve with your favourite like ugali
