Ingredients

  • 3/4कप उबले मटर के दाने
  • 1/2कप बारीक कटी मैथी
  • 1बारीक कटा प्याज
  • 2हल्के उबले टमाटर
  • 1/2चमचा जीरा
  • 1/2चमचा काली मिर्च पाउडर
  • 1/4कप दुध
  • 1चमचा मलाई
  • 6काजु
  • 1चमचा खसखस
  • 1/2चमचा गरम मसाला
  • 1/2चमचा तेल, घी
  • नमक स्वादानुसार
  • पेस्ट के लिए- 1 छोटा प्याज़,4 हरी मिर्च,4 कली लहसुन,1टुकड़ा अदरक

    पेस्ट की सामग्री पिसकर अलग रख दें, टमाटर काट लें,काजू व खसखस को 2-3 चमचा दुध में 15 मिनिट के लिए भिगोए और पेस्ट बना लें।

    एक बर्तन में आधा कप पानी, कटी हुई मैथी, चुटकी भर नमक व चुटकी भर शक्कर डाल कर अलग रख दें।

    15 मिनिट बाद मैथी से पानी निकाल कर अलग करे, कढ़ाई में एक चमचा तेल गरम करें, इसमें मैथी डाल कर मध्यम आंच पर लगभग 4 मिनिट तक भुने, मैथी अलग निकाल कर ठंडी होने दें।

    अब कढ़ाई में 2 चमचा तेल गरम करें और जीरा तड़काए इसमें बारीक कटा प्याज डालकर सुनहरा होने तक भूनें।

    अब अदरक लहसुन, प्याज़, मिर्च का तैयार पेस्ट डालकर 5 मिनिट तक पकाए उपर से काली मिर्च और कटे टमाटर डाले और पकने दें, तैयार मिश्रण में पकी मटर व मैथी डालकर मध्यम आंच पर 2 मिनिट तक पकाए अब काजू, खसखस का पेस्ट डालकर पकाए। अंत में दुध, मलाई व गरम मसाला डालकर 2 मिनिट पकने के बाद गैस बंद कर दें। गरमागरम मैथी मटर मलाई चपाती के साथ परोसे।
