Roughly chop the onion and fry gently in oil. After a few minutes add thyme, chilli, balsamic, sugar and salt

Crack open your eggs, add some Parmesan, mix well. After your onions are to your liking (I leave a bit of crunch) add drained chickpeas. Stir and cook for 2 mins

Add beaten eggs and Parmesan. Give a little mix so the ingredients don't stay at the bottom. Cook for 4-5 mins on low. Add sliced sun dried tomatoes. Finish off cooking under the grill. (This way no need to flip it over :))
