Eggless papaya sponge cake

In a mixer jar except water mix all the wet ingredients (papaya puree, sugar, vanilla essence, white vinegar, cooking oil). Blend the mixture to a smooth paste. Keep aside.

In another bowl take all the dry ingredients (maida, wheat flour, salt, baking soda). Mix well.

Add wet papaya mixture to the dry maida mixture. Mix little by little. Add water and mix well to a smooth lump free batter. Batter should be thick but pouring.

Pre heat oven to 180*C for 10 min. Grease and dust the cake pan.

Pour cake batter into the cake pan and sprinkle brown sugar on top. Bake for 30 min.

Take it out of the oven and let it cool completely. Invert the cake pan on the plate.

Slice and serve.

Adjust sugar to taste.
