In a small bowl, whisk together the eggs and milk. Keep this aside. Melt the butter in a nonstick pan. Add the chopped onions and bell pepper and saute until they turn soft and translucent. Add this to the egg mixture and mix well. Grease the pan with butter if needed. Gently pour the omelet mixture into the pan.

Sprinkle with shredded cheese and sliced olives. Gently flip over the other side and cook for 1 min until cooked. Fold the omelet in half and slide gently onto the plate. Garnish with more olives if needed. Serve immediately with toast.
