2 tinssardines in spring water, drained & flaked
200 gcherry tomatoes, halved
150 ml1/2 fat creme fraiche
2heaped tbsp chopped fresh parsley, plus extra to garnish
Salt & pepper
240 gspaghetti

Cook the spaghetti in a large pan of boiling salted water according to pack instructions.
Heat 1 tbsp oil in a large frying pan over medium heat & add the tomatoes.
Cook until they are starting to break down then season with salt & pepper & add the flaked sardines.
Stir in the creme fraiche then allow to cook for one minute before adding the parsley.

Drain the spaghetti & add to the sauce.
Toss to coat & serve immediately garnished with extra parsley.
