Stuffed peppers!

I had a friend over today recently, they came in with an empty and left with a full one (which is the motto of my home!) the visit was a bit unexpected and I was running pretty low on supplies. It was the end of the week and the night before my food shop so I didn’t really have much in. I stood in the kitchen wondering what to make that would leave my friend with a nice full belly, then I remembered my peppers! There’s not much you can’t do with a pepper, but stuffing them is one of the best.

This certain friend that comes is one of those people who very rarely give a compliment, it actually irritates me sometimes (but I haven’t said anything.. yet LOL) I remember spending a very long time decorating my son’s bedroom, I spent almost everyday in there for almost 3 weeks before I’d finished it. My boy loves star wars so I drew and handpainted all the characters on his wall with inspirational quotes. I was SUPER proud of it. When I invited my friend to be one of the first to see it he came in, looked about, and started walking back out the door! I asked him if he thought id done a good job to which he replied ‘yeah’ and carried on the journey out the bedroom! LOL I could give a thousand scenarios like that but I’ll just cut to the point.

After 3 years of knowing this man and never hearing a compliment come from his mouth, the moment he ate one of my stuffed peppers (I was in another room at the time – okay, i was in the kitchen, he was in another room lol) I heard him saying to my terry ‘that’s really good’. At the time i weren’t too sure what he was talking about but as soon as i walked into the room he went out of his way to specifically point out how beautiful my peppers were and how they tasted ‘really, really, good’.. Well i will say i was in shock! I just mumbled thank you and went back to my kitchen LOL that’s first time ive heard him compliment anything so they’ve gotta be worth a try! LOL

Give them a go, make them on their own or add them into one of my dinner ideas, - especially if you have one of those ‘non-complimenting’ friends like me! You never know it could just change their ways! LOL

P.S My sons room is amazing, no matter how much my friend tries to pretend its not! 😉

Ingredients

4 servings
  • 1drizzle of oil
  • 4peppers (any colour)
  • 500 gbeef mince
  • 400 gtin chopped tomatoes
  • 400 gtin cream of tomato
  • 1large onion chopped
  • 2 clovesgarlic
  • 1 tspItalian herbs
  • 100 gcheddar or mozzarella
  • Sprinkle of Parmesan

    Heat oven to 200c, heat oil in pan

  2. 2

    Add onion and cook until softened. Add the garlic and beef, and cook until the meat is browned. Add the tomatoes, cream of tomato and Italian herbs. Season, cover and simmer for 30 mins.

    Whilst beef mixture is cooking, cut the tops off the peppers and scoop out the seeds and white membrane. Place cut-side up in a roasting tin in the oven, season and bake for 20 mins.

    When the mince is cooked, split it between the softened peppers.

  5. 5

    Sprinkle with cheese and parmesan and put back in the oven for 10 minutes. Enjoy!
