The mango sago pudding is a very humble yet exotic and quick mango dessert with all the goodness and flavours of mangoes to satiate one's sweet tooth during the fast and keeps you full throughout the day.
Steps

Soak the sago in water for 2 hours and drain.

In a saucepan of boiling water add the sago and sugar and cook, stirring the sago over medium-high heat.

When the sago becomes partially cooked (translucent) turn the heat off.

Peel and chop the mangoes and reserve 2 tablespoons of finely chopped mango pieces for garnish.

Blend rest of the mango pieces with evaporated milk and sugar to make smooth paste.

The amount of sugar can be adjusted according to the sweetness of the mangoes.

Add the mango juice and mix well.
Now add the sago to the prepared mango mixture and mix well. - 8
For serving
Pour a teaspoon of mango smoothie in bowls or small glasses, add prepared sago pudding. - 9
Top with Mango chunks and mint sprig.

Now refrigerate for 2 hours until cool.
Serve chilled with lots of love.
