Doodhi (Bottle gourd) has a high water content and therefore imparts softness to the muthiya.
Steps

Strain the water out of the grated doodhi.

Combine all ingredients together in a bowl and mix well and knead into a soft dough adding curd as required.

Apply a little oil on your hands and shape cylindrical roll.

Arrange the rolls on a greased sieve and steam in a steamer for 20- minutes.

Cool slightly and cut into muthiya.

Heat the oil in a pan and add mustard seeds let it crackle, add the Sesame seeds and hing, green chilli and saute on a medium flame.

Add the muthiya pieces and saute on a medium flame for 3-4 minutes until it turns light brown colour and crisp.

Serve immediately,garnish with coriander and serve with tea.
