Chop the Chinese broccoli and wash thoroughly. Place in a colander and set aside.

Heat a pan and cook the eggs until golden and fragrant. Remove and set aside. Pour out any remaining oil.

Pour the water into the pan, add the seasonings, and stir to combine. Once the water starts to boil, taste and adjust the seasoning as desired. Add the rice noodles and gently stir-fry until the liquid is absorbed.

When the noodles are fragrant, add the Chinese broccoli and stir-fry until the vegetables are cooked. Add the cooked eggs and mix everything together. Once well combined, transfer to a plate and serve.
