Tear the mushrooms by hand into thin strips so they resemble pieces of gyros.

In a large bowl, toss the mushrooms with the olive oil, spices, and juice from half a lemon. Cover and refrigerate for 30 minutes to 1 hour.

Spread the mushrooms on a baking sheet lined with parchment paper and bake for 35 minutes at 400°F (200°C), turning them halfway through, until they lose their moisture.

Serve hot, sprinkled with parsley. You can also use them as gyros in pita bread with tomato, onion, and fries!
