Vada pav is a famous street food of Maharashtra.
Steps

For dry red chutney.Peel the skin of all the garlic.Dry roast garlic,dry grated coconut and red chillies separately. After it cools add salt,hing and then coarsely grind all the above roasted ingredients.The dry red chutney is ready.

Now boil the potatoes.Peel the skin and keep it aside.In a mixer jar coarsely grind green chillies,ginger and garlic.

In a pan pour 1 tbsp oil add mustard seeds.After it splutters add hing,curry leaves,turmeric powder and coarsely grinded ginger,garlic and green chillies paste.Fry for 30 to 40 seconds and off the flame.

Now add mashed potatoes.Add chopped coriander leaves and required salt.Mix well and make medium balls from mashed potato mixture. Cover it and keep it aside.

For batter.In a wide bowl add besan,rice flour,turmeric powder,hing, salt,baking soda (optional) and mix it.Now add required water to make a smooth batter.The batter should be little thick than the bajji batter consistency. Now batter is ready.

In a kadhai heat oil for deep frying the vadas.

Dip the potato balls in the batter.Coat the batter evenly.Gently drop the coated potato balls in the medium hot oil.Depending on the size of kadhai you can add the vadas for frying.

Deep fry batata vadas till golden brown evenly.Drain them on kitchen paper towels.Fry all the vadas in the same way.

Slice the pav without breaking it into two parts.Sprinkle the dry red chutney on the pav.Now place the hot Batata Vada sandwiched in the pav.

Serve these Vada Pav immediately.
