Potato Croquettes (and Whatever Fillings You Like 😉)

I unexpectedly ended up with a bunch of potatoes that were ready to eat, but we don’t really eat that many potatoes at home. So, to keep them from going bad, I decided to make a ton of croquettes... Tuna, mussels and cheese, veggie... Some for my freezer and some for my parents’—my sister loves them! 😋

I unexpectedly ended up with a bunch of potatoes that were ready to eat, but we don’t really eat that many potatoes at home. So, to keep them from going bad, I decided to make a ton of croquettes... Tuna, mussels and cheese, veggie... Some for my freezer and some for my parents’—my sister loves them! 😋

Peel the potatoes and boil them. Once fully cooked, drain and transfer them to a bowl. Mash with a fork until you have a thick, smooth mash.

Now decide what kind of croquettes you want to make. Heat a skillet and prepare a sauté with your favorite ingredients to add to the mashed potatoes. I made some with tuna, some with veggies, some with mussels, cheese, and egg, and some with peppers. The key is to make a tasty sauté with your preferred spices and mix it well into the mashed potatoes.

Let the mixture cool for a while so it’s easier to shape the croquettes without them falling apart. Prepare three plates: one with cornstarch, one with beaten egg, and one with breadcrumbs. Shape the mixture into balls and coat them in that order.

Once all the croquettes are formed, you’ll have a good batch ready 😋. Freeze some for later and enjoy the rest after all that breading.

I made a delicious tomato sauce to serve with the croquettes and a bit of rice. You can also add a salad or whatever you like 😉.

Heat a small pot with plenty of hot oil and fry the croquettes. Since I had croquettes with different fillings from previous days, I made a mixed batch and they turned out great 🍳.

Once everything is ready, serve the croquettes with rice and tomato sauce. They’re absolutely delicious 🎉. Hope you enjoy! 😉.
