Ingredients

2-4 servings
  • 300 gmince turkey
  • 2 tbspolive or fry lite spray
  • 3medium potatoes, peeled and cut into pieces
  • 4garlic cloves, chopped
  • 3small onions
  • 1red pepper, chopped
  • 4frozen spinach blocks
  • Handfulfrozen broccoli
  • to tasteFine red pepper flakes
  • to tasteGround black pepper
  • to tasteSalt
  • 300 mlhot chicken stock
  • 2Bay leaves
  • 3ripe tomatos, peeled and chopped

Steps

  1. 1

    Heat the olive oil in a wok or deep frying pan. Add the turkey and cook through, then add the onions, garlic and bay leaves. Continue to cook for 3-4 minutes.

    Add the tomatoes, potatoes, red pepper, spinach and broccoli. Cook for another 4-5 minutes.

  3. 3

    Season with salt, ground black pepper and red pepper flakes. Mix well.

  4. 4

    Add the stock and reduce the heat. Cover with lid and slowly reduce the liquid. Cook until the liquid has almost all gone.
