Heat the olive oil in a wok or deep frying pan. Add the turkey and cook through, then add the onions, garlic and bay leaves. Continue to cook for 3-4 minutes.

Add the tomatoes, potatoes, red pepper, spinach and broccoli. Cook for another 4-5 minutes.

Season with salt, ground black pepper and red pepper flakes. Mix well.

Add the stock and reduce the heat. Cover with lid and slowly reduce the liquid. Cook until the liquid has almost all gone.
