Ingredients

  1. 3 1/3 poundsboneless, skinless chicken thighs (about 1.5 kg)
  2. 1 tablespoonwhite vinegar
  3. 1 tablespoonlemon juice
  4. 1 tablespoontomato paste
  5. 4 clovesgarlic, crushed
  6. 1/4 cupvegetable oil (60 ml)
  7. 1 tablespoonplain yogurt (I used labneh)
  8. paprika
  9. 1/2 teaspooneach of:
  10. white pepper,
  11. black pepper,
  12. ginger
  13. 1/4 teaspooneach of: cumin,
  14. chili powder,
  15. and curry powder

Steps

  1. 1

    Slice the chicken into thin strips, like for schnitzel, and marinate with the above ingredients for at least 3 hours or longer.

  2. 2

    Insert a whole potato onto wooden skewers to serve as a base, then stack the marinated chicken onto the skewers.

    Place the assembled skewer inside an oven-safe roasting bag and bake in the oven for about 1 1/2 hours.
