This is the first week this year that Jersey Royals have been available in the market so combining with wild garlic for a fresh tasty spring dish. New potatoes also work beautifully. And once the wild garlic season is over, other green leaves like parsley are good. This is easy and quick. And works as a side with other veg dishes/ fish or meat.

Ingredients

2 as a side
  • About 300g potatoes - new or Jersey Royal
  • Handfulwild garlic - chopped quite finely
  • 1glug of extra virgin olive oil or a knob of butter
  • Sea salt

Steps

    You don’t have to peel the potatoes but wash them well. Bring a pan of water to the boil. Add the potatoes and boil until tender - about 10 mins or so. (Less for smaller potatoes.)

    Chop the garlic.

    When the potatoes are ready, drain. Then add the garlic, oil or butter and a generous pinch of sea salt. And stir through so the oil coats the potatoes/ the butter melts and the garlic wilts.
