Cheese Omelette Sandwich

Beat one egg in a bowl. Add some finely chopped tomato, yellow and green peppers and whisk using a fork.

To this add a pinch of salt and black pepper, chaat masala, red chilli powder and mix nicely.

Heat some oil in a pan. And fry the omlette. Sprinkle some coriander, oregano and chilli flakes. Flip the omlette. DO NOT OVERCOOK OR BURN THE OMLETTE.

Apply some tomato ketchup and mayonnaise to 2 slices of bread. Cut out a square out of the omlette and place it one one bread slice.

Put a slice of cheese onto the omlette. Now put the remaining sides of the omlette on the cheese and cover it with another slice of bread.

Apply butter on both sides of the sandwich. And heat it on the pan till both sides are crisp and brown.

Put the heat off once the cheese starts softening (not melting).

Remove the sandwich in a plate and cut into 4 quarters.

You can serve this with mayo+tomato ketchup dip or mint chutney.
