sabudana vada is a traditional deep fried snacks from Maharashtra. Also known as Sago vada, it is often served with spicy green chutney and dahi. This is a must make during fasting period 😋
Steps

Overnight soak the sabudana in water. Do not add too much of water. Water must just litter more than the sabudana.

Next morning sabudana is ready to use.

In a pressure cooker boil the potatoes. Once done peel them and mash them completely.

Mix the sabudana and potatoes.

In a frying dry roast the peanuts then grind it to get a coarse powder.

Now add this peanut powder along with salt, 1tsp of sugar, green chillies and coriander leaves to the sabudana and potato mixture and mix them very well.

Using your palms mould flat, round vadas from the mixture.

Heat oil in a kadhai and deep fry the vadas till they have turned golden brown in colour.

Take them out on a kitchen towel to drain any excess oil.

Serve them with hari chutney and dahi and enjoy 😋
