Whisk the eggs with the milk and some salt

Prepare the inside ingredients and the sides. Chop the tomato salt and pepper it. Fry the bacon and set aside. Smash the avo and season with lemon juice, mixed herbs. Sautee the mushrooms in butter or oil, season with salt and mixed herbs and set aside

Grease a pan and on medium heat add the eggs. Cover for about 2 minutes then remove. Let the egg almost fully cook before adding the cheese, mushroom, and bacon.

Fold over the egg, turn off the heat and cover the pan with the lid for another minute for the cheese to melt

Remove from the pan, garnish with tomato and avo and serve!
